Iñaki Berregi, since the year 2000, has taken part in several research projects related to apples and ciders. On the year 2010, he began with the study of mono-varietal ciders, produced with a single apple variety, in opposition to the usual method, which uses a mix of varieties. The aim is to find the contribution of each variety to the final composition and organoleptic characteristics of the cider. 24 mono-varietal ciders were produced and studied throughout three seasons. Besides, another study was performed with these ciders, which tries to find the contribution of each polyphenolic compound present in the cider on the following properties: total antioxidant power, browning, protein-precipitation capacity, turbidity and reduction potential. These are very interesting properties, as they affected the flavour, appearance and preservation of cider, and they are related mainly with polyphenolic compounds.



The results of all the works mentioned before have been released in 22 communications to scientific congresses and in 17 articles published in international journals of food science and chemistry.



Currently, Iñaki Berregi is studying the application of enzymatic reactions to the determination of different compounds found in alcoholic beverages, like ethanol, sulphite, nitrate and nitrite.
