PhD in Biological Science (UPV/EHU, 1992). Professor in the Department of Biochemistry and Molecular Biology of the UPV/EHU in the Faculty of Pharmacy. Member of the LACTIKER research group since 1993. Her main research topics have been the technological, biochemical and nutritional aspects of dairy products. Her work has been focused on the study of the biochemistry of cheese ripening, especially the evolution of the fat and protein fractions, the characterization of the enzymes and microbiota responsible for the metabolic proceses during ripening and the factors affecting its nutritional properties.

She has published more than 60 articles in scientific international journals, and has numerous contributions to international and national congresses (code ORCID 0000-0002-1482-0566). He has directed 10 research projects financed by public institutions and a contract with a company, and has participated in more than 40 projects directed by other researchers. He has co-directed six doctoral thesis. Academic Secretary of the Faculty of Pharmacy for 9 years and Dean for 5 years.

Currently, she is responsible for the research line that studies the nutritional characteristics of dairy products. Likewise, she is responsible for a new line of research in Lactiker in which, using techniques based on the massive sequencing of DNA, the microbiota of Idiazabal cheese and its antibiotic resistance are analyzed.
